    Episode 2: De Heamiel Pancake

    In this epsiode of Proeftijd our hosts, Akke en Haye Ketelaar from Heeg, will show us their farm and explain how the typical Frisian pancake: Heamiel Pankoek is made.

    Early in the morning we take a look at the farm of Akke de Jong, while they are miking the cows. This fresh milk is one of the main ingredients of the Heamiel Pankoek, wich we will taste today in this episode of Proeftijd. Also fresh eggs come from Akke her own fam chickens. We take a look at the the mill ‘t Lam’, which is close by in Woudsend and we learn from miller Cees how flour is made. After that we pay a visit to the biggest fan of the Heamiel Pankoek in Heeg.

    Dish: Akke’s zomerse pannenkoeken.


    The ingredients:

    * Raw fresh milk
    * 2 eggs
    * 250 gr. flour (for traditional pancake, or 250 grams of wheat flour for a Heamiel Pankoek)
    * Pinch of salt
    * Butter for frying


    Preparation:


    Put the flour and a pinch of salt in a sieve over a large bowl. Tap against the sieve until all flour falls thrue. Break the eggs by tapping them on the edge of the bowl and break them open over the bowl. Pour the milk in the same bowl. Beat the batter with a mixer or whisk until all lumps are gone. poor some more milk if the batter is too lumpy.

    Put a bit of butter in a frying pan and let it melt. Poor some of the batter in the middle of the pan and let it bake on a medium/low fire. Bake untill top of the pancake is dry and the bottom browned. Turn the pancake over so they are nicely brown on both sides.


    Akke's favorite pancakes are pancakes with summer fruits. When she puts strawberries on top, she first cuts them int small wedges. It tastes extra good with (fresh) cream on top.

    The combination mango with blueberries is top favorite with family Ketelaar. They are the tastiest when you poure syrup on top from Jan Bax Veen.
