    Episode 3: Harder with grasswort and sea lavender

    In this epsiode of Proeftijd we are guests at De Zwarte Haan. Owner Jacob Jensma will show us what a delicious dish you can make with products from ‘het Wad’.

    For this episode of Probation we traveled to The Black Rooster, located at the foot of the seawall, where we look out over one of Europe's largest salt marshes' Noard Friesland Bûtendyks. The over 4180 hectare area is a paradise for flora and fauna. Jacob takes us over the causeway on the mudflats, where we go in search of sea lavender and samphire. Sea lavender is known for its salty taste and therefore goes well with fish dishes. We also reap samphire, a surprising light salty sea vegetable with bite.

    Fisherman Max Hoogerman we learn in the Harlingen fishing on fishing for mullet. Max Hoogerman fishing still an old fashioned way and is affiliated with the label "Good Fishing". We then return to the kitchen of The Black Rooster where Jacob shows us how these pure products of the flats can be prepared. Time for Probation!

    In the program Proeftijd, the focus lays on food and the origin of products from the region, but also about the stories behind a recipe from the region. A dish from grandma's kitchen or perhaps you invented a recipe yourself? During the program we look for tasty food from the region in combination with a special story.

    In every episode a recipe from the northern region is the lead. We examine what products are processed in the dish and where they come from. Perhaps the program inspires you to prepare dishes from the north yourself!

    In short, it is time to try and taste food and dishes from the North of the Netherlands.
